Legoland Employment – Sous Chef

Job Description:

LEGOLAND Florida Resort is a 150-acre interactive theme park dedicated to families with children between the ages of 2 and 12. With more than 50 rides, shows, and attractions, and uniquely themed LEGOLAND Water Park, LEGOLAND Hotel, and LEGOLAND Beach Resort inspired by the LEGO and DUPLO brands, LEGOLAND is geared towards family fun!

Job Responsibilities:

• Ensure that all recipes, food preparation and presentation meet department specifications and commitment to quality.
• Maintain high standard of food quality throughout hotel kitchen operations.
• Assist in the review and development of menus/menu items.
• Establish and maintain cleanliness standards and procedures including Merlin
• Assist with the supervision of line cooks.
• Lead, train, and direct kitchen staff in the absence of Sous Chef 2 or Kitchen Manager.
• Guarantee cleanliness in the hotel restaurants, following company standards.
• Ensure written recipes, presentation and SOPs are followed consistently and accurately.
• Supervise kitchen team including chef de parties and stewards to ensure all policies and procedures are followed.

Job Requirements:

• Must possess strong communication skills, both in verbal and written format.
• Requires at least 5 years of practical kitchen experience, preferably in a themed environment.
• Experience and knowledge in food and culinary design is desired.

Qualification & Experience:

• Intermittent and prolonged standing and walking to move about the park site, and interact with employees.
• Must be able to work in locations offering varying degrees of temperature fluctuations, ranging from freezer to oven areas.
• Requires lifting, bending, and repetitious movements.
• Hearing sufficient to communicate with individuals in person and by telephone.
• Effective organizational and problem solving skills with the ability to make quick decisions.
• Ability to work as part of a team and to develop others within the team structure is required.
