Job Description: The Executive Sous Chef oversees all daily Culinary Operations of Restaurants, Carts & Kiosks, Specialty Snacks, Banqueting, Catering, & Consumer events. The Chef manages all kitchen (back of house) staff including the Banqueting Chef, production bakery staff and all line cooks. The Executive Sous Chef is responsible for producing a cost-effective, high quality product in all locations. The Chef reports to the VP of Revenue and must maintain a cooperating relationship with the F&B Director and other heads of departments. The Chef will be held accountable for overall food cost and food inventory levels along with food safety protocols and cleanliness. The Chef will be involved with menu design, planning and operational execution. The Chef will ultimately be the face of the Food Program and will also be required to engage with social media marketing department to create fun, creative items to market to guests. Job Responsibilities: Responsible for food cost and recipe management Responsible for Food & Beverage safety standards and protocols Responsible for training of new cooks in collaboration with the Sous Chef Leads menu planning and seasonal food items Works directly with the VP of Revenue, Food & Beverage Director & Supply Chain Manager Involved in event menu planning & execution Responsible for training and development of staff Oversees all daily Culinary Operations Responsible for food inventories in-Park and in the warehouse Job Requirements: Experienced in inventory management control Minimum of 3 years as an Executive Chef Advanced knowledge in Menu Engineering Advanced knowledge in Food Cost Management Qualification & Experience: 3+ years experience as an Executive Chef or Executive Sous Chef in a high volume atmosphere Experience as a Chef or Sous Chef in a theme park or amusement park atmosphere Experience as a Chef, managing multiple outlets Advanced experience in running a Culinary “Back-of-house” P&L Job Details: Company: Busch Garden Vacancy Type: Full Time Job Location: Orlando, FL, US Application Deadline: N/A Apply Here careersvite.com
